Here is a very good recipe !!
At the house I cook my potatoes in the vapor with some cloves of garlic then I add some olive oil instead of the butter. I live in Provence in the South of France, we put some olive oil everywhere, even in the Mashed Potatoes !!

There aren’t many things that olive oil isn’t good on, oui?
Except maybe chocolate mousse.
I have put olive oil in my mashed potatoes and it’s very good.
But I still prefer good butter.

I heat the milk. It mixes better and keeps the potatoes warm.
When you put cold milk in, the heat from the potatoes needs to work to absorb it. When it’s warm, it doesn’t.
Just my opinion, others may disagree.
You ever tried Irish champ? Let me know, and I’ll shoot you a recipe if you want. It’s to die for….
