No breakfast is complete without these most humble of spuds.
My recipe is simple but it’s better than most restaurants that call these things ‘homefries’.
[at least that's what my girls say]

You will Need:
1lb Bacon, fried crisp, (save the drippings!)
3-4 lbs potatoes (sliced, cubed and boiled/microwaved for 20 mins+)
(boiled the night before is much better)
1 sweet onion, diced
1 tsp salt (or 1/2 tsp of Kosher salt = better)
1.5 tsp fresh ground pepper (never, ever use ground pepper!)
1/2 – 3/4 tsp oregano (to taste, you don’t want alot!)
2Tbls paprika (or so)
+bacon drippings

Do this:
Heat bacon grease on medium to high heat (don’t let it smoke!) and add cooked potatoes and diced onion.
Turn over and brown, while adding salt, fresh ground pepper and oregano.
Add more bacon drippings, if necessary.
Fry for 15-20 minutes or until done and well browned.
Sprinkle on paprika (not the smoked kind!) and turn to mix.
Cover and remove from heat for 5 minutes.
Enjoy.

    I can still taste these!
    Being a potato lover, if there is a way they can be eaten with any meal of the day, then I’m there.
    There’s no better way to start the day than with some taters!
    You have to make these while you’re here too BTW.
